Quinoa

Need energy in the morning? The following recipe includes quinoa- my new favorite food. Not only is it considered by some a “superfood” but it is delicious.
Nutritious AND yummy- what a great start to any day.
Quinoa is a good source of amino acids (which helps build muscle and tissue), protein, iron, fibre (which helps lower blood glucose levels) and manganese (an antioxidant).
The following recipe (per serving) consists of 365 calories, 1.4 gm. saturated fat, 53 gm. carbohydrates and 12 gm. protein.

Blueberry Quinoa Breakfast Cereal
(serves 4)
2 c non-fat milk or unsweetened almond milk
1 c quinoa, rinsed
2 c blueberries
1/2 c chopped pecans
1/4 tsp. ground ginger
1/4 tsp ground nutmeg
2 T maple syrup

Place milk and quinoa in a medium saucepan and bring to a boil, stirring occasionally.
Reduce heat to low, cover and simmer 18-20 mins. or until most milk has been absorbed.
Remove from heat and let stand covered 5 mins.
Uncover and stir in blueberries, pecans, ginger,nutmeg and maple syrup.
Enjoy!
